2 small onions diced
4 cloves crushed garlic
2 tablespoons olive oil
1 inch root ginger, chopped finely
- Sweat these items together.
- Add 500ml cider and reduced by half.
- Add two teaspoons chopped thyme and 250ml chicken stock and reduce by half.
- Add 300ml double cream and 2 tablespoons brandy and some ground pepper and warm through gently.
- May be used with pork, chicken or for a vegetarian dish, assorted vegetables.
